I’m up to my eyeballs in green beans! It’s funny because we normally don’t eat many beans, but seriously, we have a thousand of them. I’ve frozen or canned most of them.
I suppose if tragedy strikes and we have to live on food storage then we will be eating a lot of beans. However, we have also eaten quite a few fresh, and here are a couple of my favorite ways:
Green Bean Tempura – One of my favorite ways to eat green beans is tempura style. We followed this recipe and they turned out pretty well: http://www.bonappetit.com/recipe/green-bean-tempura. Best Green Beans Ever – The Pioneer Woman has a fantastic green bean recipe: http://thepioneerwoman.com/cooking/2008/06/fresh-green-beans-one-way/. I think the key is that she uses bacon grease to saute instead of oil or butter. Yes, bacon grease. Sounds weird, but SO yummy.
By the way, a key to cooking a good green bean is to harvest them out of your garden at the right time. If they get too big then they will be way too tough. You want them to be about the thickness of a pencil, no bigger than a sharpie.
